I signed a payment arrangement stipulation, and defaulted. Can I appeal what I signed? and what if judgement has not been entered yet?

and thanks to those attorneys that are kind enough to respond. We really appreciate your help.

You cannot appeal. The entire reason for a settlement is to end the litigation and cut costs.

If the settlement provide for entry of judgment upon default, there really isn't much else you can do to prevent entry of judgment besides filing for bankruptcy or making arrangements to cure the default.

Your best bet is to pick up the phone and try negotiating.
