if I cash an insurance check under protest can i protest later?

Maybe. What is stated on the check or in the cover letter which came with it?

A safer way to do it is write the insurer stating your acceptance of the check is not a final settlement of the claim and is paid by them and accepted by you without prejudice to your rights.
