My former employer, the moving party in my termination, offered a Separation and General Release

Agreement that stipulated upon signing they would (A) pay a severance equal to eight weeks of pay, (B) revise all official Human Resource documents to change my termination of employment for cause to a voluntary resignation, and (C) to the fullest extent permitted by law I would agree to give up all rights to sue the company.

Question - In this case, If I agreed to have my documents revised to voluntary resignation would this effect my eligibility for Unemployment Insurance?

Yes. You might negotiate with them to modify the agreement to state that they will not contest your application for unemployment compensation once the severance has been fully paid.
