I filed an unlawful detainer suit against my tenant. At court today the defendant won because my three day notice was outdated. Do I file another complaint and summons after giving tenant the newer three day notice?

You can, but you're limited by law how far back you can claim that rent is owed. Since the tenants seem knowledgeable, you might want to retain an eviction attorney to prepare a proper three-day notice and unlawful detainer lawsuit.
