Legal Question in Legal Ethics in California

I have worked for the same employer for the last four years; as of this week, they have decided to "fire" all staff and potentially re-hire us but with a whole new set up rules and procedures. We would also lose all accrued PTO and have to start from square one. We also have to either convince our employer of why we deserve to earn our current pay rate or take a pay cut. I am wondering how much of this is legal. We also don't get regular lunch breaks as it is and I have never once received a 10 minute break, even though I work full time. Do I have any recourse?
