My fiancé is divorced with a child, he's paying child support. I make significantly more money than he does and I want to clarify if my income will be looked at ( in any way) in the eyes of the law if his ex wife decides to ask for an increase in child support, after we're married.

Under current Florida law 2nd spouse income is not considered.
