I want to leave my fianc� and take my son to another state with me. Will I get kidnapping charges?

This depends on whether he has any rights to the child. If you were never married to him and he never filed for paternity of the child, it is possible that he has no rights at all and you can therefore take the child anywhere you like. Again, the answer depends on what rights he has or has established...which vary by case and circumstance. I'd suggest you consult with a lawyer before removing the child to another state to determine more concretely what rights your fiance has.
