Legal Question in Family Law in Florida

Ex travels out of state 5 days a week at her new job. Children and I live out of state. Case is in Florida where ex lives. 8 weeks summer visitation, she will not be there. Can this be changed?

Yes. If it's a one time thing, you can change it by agreement between the 2 of you. Put the agreement in writing. See a lawyer if you get stumped, pay him/her to draft the agreement. If this is going to be an "every summer" thing, do a petition to modify time sharing. You will need the court to approve the change.

You need to state how long children have lived out of state. If they are out of state more than 181 days Florida may have lost jurisdiction and the courts of the new Home State have jurisdiction. Safest if you speak with attorney.
