My son is the beneficiary of his fathers life insurance policy. However, he is a minor. What happens with the insurance money if his father dies and my son is still a minor?

Depends on how it has been set up.

For instance, my child is beneficiary of my life insurance policy, but the proceeds are to be put into a trust managed by the trustee I have chosen, for the benefit of the beneficiary. If there is no trust, then the child's guardian/custodian will manage that money. I assume that would be you in this instance, if his father dies.
