What a bunch of jerks. No one should work and get stiffed.

You call me up, come in to see me with your paperwork if you have any and then...well, I make this person's life as difficult as possible. I call them, let them know they must pay, write letters threatening to sue, and then I sue them for as much as possible. After I get a court judgment, I have the sheriff shut them down. I walk in the front door (if they are close enough) and loudly let them know they owe you money. I pursue them like grim death.

Call me, I will help you.
