Taping Phone Calls

My sister-in-law has admitted to taping phone conversations of her relatives, her relatives have told her to stop.

What can be done to convince her to stop this?

The best way to stop her is to advise her that her actions are illegal. A party may not tape another parties conversation unless they have permission from one of the parties. So, if the call is to your sister-in-law, she may tape it without advising the other party, but if she is not a party to the conversation, she may not. This is NY law.
