Legal Question in Family Law in Tennessee

being a legal gaurdian

My fiance has two young girls that live with us. Both my fiance and the girls mother(who lives in Florida)are willing to sign papers to make me a legal gaudian since me and their dad have not been married yet. Is there a non-court way to take care of this.

No.

You can prepare whatever paperwork you want, but without the appropriate judge's signature on a Court Order, the paperwork will have no legal significance.
