Can a bank come after my fiance's assets after we're married for debts I aquired before we were married

Legally, no. But, they can scare the hell out of you by threatening all sorts of things. Hence, might be a good idea, just to keep things as uncomplicated as possible, to maintain a separate bank account. The point: all sorts of things are done and/or threatened to collect on debts, and many times by entities who you would think above suspicion. The strategy is that if a person doesn't know their rights and how the law works, and does nothing to find out, then all is fair in debt collection.
