Legal Question in Employment Law in Texas

What kind of lawyer would i need for someone that is leasing a small place for a restaurant but has never been giving anything to sign like a (contract) the owner keeps the sales taxes and when things break down he makes them pay for repairs he's also trying to mandate how many days they need to work. When they started (4 years ago) the rent was $500 a week but as soon as place showed some life he raised the rent more and more and more.....now its up to $8000 a month plus the taxes he keeps, last year they made about $360,000 in sales and they had to pay taxes from their own pocket when it should be from the sale taxes the other guy keeps, there's many more issues that worry me but right now i need to know who i can go to. this guy is ripping this people way off.....plese help
