Legal Question in Family Law in Washington

I am currently going through a divorce and about to be deployed for military service. My soon to be ex is threatening to take me to court because I will not give her power of attorney over my house and truck, neither of which have her name on the documentation any where.

I know I am not legally required to give anyone a power of attorney if I do not want one.

My question is what is the likelihood that she will actually be able to take me to court over this and have it end up in her favor?

You didn't say whether she has an ownership interest in either the house or the truck, who will be using the house and the truck, or whether you have children. These are some factors that would affect the matter.
