Homestead

If a couple are joint owners of property, but not married do we use the couples form or the do we each file a single form to homestead our property?

These forms are privately published, not official, so without seeing the actual form, I don't know for sure which has the right blanks and asks the right questions. However, based on the law and the way it applies to married and unmarried persons, I'd guess that if you are neither married nor registered domestic partners, you'll be better off recording two separate single-individual forms.
