Legal Question in Tax Law in California

I'm about to inherit some property from my grandparents (via their Family Trust) and I'm worried the property may be re-assessed causing the Property Tax to increase by a large amount. Is there any way around this? Is this happening because it's a Grandparent to Grandchild transfer?

It will be reassessed unless you qualify for an exemption. One exemption is a grandparent to grand child transfer, provided that the parents of the grand child are deceased. If that is not the case, the exemption does not exist. If that is the case, it is not automatic, and you would be required to file specific applications with the county to obtain the exemption.
