How do I give a portion of the land I own in Canada to my daughter & son-in-law?

You could engage the services of a Canadian attorney in the area where the land is located to

draw up the paperwork necessary to make the conveyance.

If your intent is to devise the property to them after your death, you could make a testamentary bequest of the property to them in your will.
