Contract law

We have all received in the mail, that check with the enclosed contract. Sign and cash that check and you have just agreed to the enclosed contract. Can I change my contract with my credit card company the exact same way?

Enclose a new contract with a check that says if this check is endorsed and cashed the company is now bound by the new contract enclosed, sent to the correspondence address?

No, if for no other reason, they don't sign your checks, they machine-stamp them.
