Legal Question in Business Law in Florida

Regarding contract and corporate law in Florida. If there is a contract between two parties and the contract says that the fees can go up, doesn't the company raising the fees have to notify the client that the fees are going up so that that client can have the option of shopping around for another company? And if that company does this (raising the fees several times over two years period) without the other party getting notified or knowing about it is this illegal?
