how many times can the opposing attorneys ask that scheduled depositions be postponed?

There is no rule for this. I take it that you are unhappy with your attorney's going along with this. As in all cases, if you are unhappy with your attorney and how he/she is handling your case, you should consult with a local attorney about changing attorneys.
