Legal age to be considered an adult in Illinois

My son's girlfriend is soon to be 17yrs. old. Their son is 5 mos. old. She has no problem with my son seeing their son and him staying here over night sometimes. Her parents are giving her an awful time because she is 16 and living at home. Can he file for visitation and joint custody against her when she turns 17? Or will he still have to go through her parents? Can they file any charges against him although they knew he was 18 when they were dating?

Yes he can sue for custody or visitation, whether he gets visitation has no bearing on whether her parents would file statutory rape charges. I don't think the age of the mother has anything to do with whether your son can pursue visitation or not.
