Are non compete letters worth the paper they are written on? I've been told a half dozen different things.

It really depends on the language in the non-compete agreement. Many are binding. However, many are not on the grounds that they are over broad in time duration and the scope of activity or geographic area which are limited. It is wise to have an attorney review the agreement and discuss your future plans to have an informed idea of how to move forward.
