Can I be terminated because of "incarceration"? Even though I used accured vacation hours to cover for the 5 days.

Probably yes, unless you had a employment contract that provided otherwise. More than likely you were an "at-will" employee and you could be fired for any reason or even no reason. You could not, however, be fired based on your status in a protected class (i.e. race, religion, color). Incarcerated individuals and criminals are not a protected class.
