I want to transfer my house into both my name and my two adult children, would a quit claim deed do this?

Yes, but like most simple answers there are some pros and cons. Other methods to accomplish this include a Transfer on Death Deed and a Revocable Trust, both of which let you retain much more control over the property during your lifetime.
