Legal Question in Landlord & Tenant Law in Missouri

In the state of Missouri, does a landlord have to prove that they sent a letter explaining distribution of deposit. I have a past landlord I've been dealing with that "claims" they sent the letter explaining the deposit. We NEVER received that letter, even though we received mail from other entities. Anyone can say they sent a letter and sit down and type one with the date they want, but we never received it and they say they did send it. If I sue them will they be responsible for proving they sent the letter
