How do I add a purpose of forming an entity on Article of Organizaiton in NY even though it's not required to do so ?

You have to submit the Articles by mail. Or,you can submit the Articles online and thereafter amend the Articles by mail.

Not sure why you would you want to do that and restrict yourself unnecessarily, but you can add the provision to Paragraph Fourth, something like this: The purpose for which the LLC is formed is to conduct the business of ....
