Legal Question in Family Law in North Carolina

My husband filed for divorce on May 25, 2016 but the documents came to me in my maiden name and legally, that is no longer the name on any of my id so I can't sign and notarize anything pertaining to these docs. What should I do?

If you were served with North Carolina divorce paperwork then there is nothing for you to sign or have notarized (except maybe a Waiver). As to what you can do - you can file a Motion to dismiss, which would likely force him to amend his complaint (assuming he has a clue what he is doing) to the correct information or you could file an answer and correct the information yourself but filing an answer is more expensive.
