I am legally licensed by the state to carry a concealed weapon. If I leave my weapon in my vehicle, can my employer circumvent the right by threatening to fire me for having a weapon on the premises.

Yes.

The state of Texas giving you a permit has nothing to do with terms and conditions of employment, and the permit is no guarantee that you can carry a gun anywhere you want to.
