If conviction information is placed plainly on the front of a job application, is it acceptable/lawful for a company to retract their offer of employment based on arrest information and statement of probable cause found in a court file?

Your question is unclear. There is no legal protection in employment based on convictions or arrests unless one can prove that the questions are unrelated to the work and have a disparate impact on a particular group.

So, if you are saying you presented your conviction information on the application and the employer found additional information in a court file and they decided not to hire you, for the most part the answer is "so sad, too bad" there's nothing that you can do.
