Hi, my girlfriend is on her second term of her H1B. It will expire in a bit over a year. Besides applying for a green card through a job or marrying, is there any other way to obtain a green card?

Or is it possible to file for the green card through your employer and quit the job soon after?

There are many different options available for people applying for a green card/permanent residency in USA. You need to specify what she might be eligible for by providing more detailed account of her circumstances. As far as employment-based green card, no, she can't have an employer pettion for her and then quit with intent to nevr work for them again.
