Is it illegal to record voice conversations from employees while on the job in California without their knowledge?

Yes! An employer is required to publicize to employees that conversations may be monitored. They are also required to properly notify all participants to the call, like customers. Failure to do so could result in criminal charges and civil lawsuits.
