Can you record a meeting between you and your employer that deals with a statment against you??

Yes, if the other party consents. Otherwise, it's a misdemeanor to do so surreptitiously. Obtain the consent on tape.

First need more facts. Do you mean tape recording without permission? If yes, that is always problematic, with some minimal exceptions relating to the threat of a serious crime. If you mean recording say with notes, that is o.k.
