I own a restaurant. One of my waiters spilled drawn butter on a customer's cell phone which was lying on the table while food and drinks were being served. The customer claims the phone was damaged. Am I liable for her phone?

Yes, an employer is liable for the negligence of his employees incurring in the course and scope of business duties. While it may not have been the wisest thing to leave a cell phone on the table, she could not anticipate that the waiter would spill anything on it.
