Legal Question in Personal Injury in California
My husband purchased a used car but has yet to transfer title in his name. I've fully insured the vehicle so my question is ... since the vehicle is not in my husband's name and if there's an accident, will the vehicle and my husband be covered under our insurance?

The vehicle is insured; and if your husband is named as an insured, he is also.

You need to double check with your insurance carrier. Most will not insure a vehicle that is not properly registered, regardless of what your statements say. They may acknowledge the mistake and refund the premiums on it, and deny the claim.
