adult adoption heir at laaw

I live in NY but I have a special friend who is like my surrogate daughter. She lives in Colorado I live in NY. I would like to make her my heir at law. Can I adopt her or some how make her my family legally?

It would be easier to just execute a will that leaves her most or all of your assets. The other process is complicated and expensive.
