how long is it before sentencing occurs after one has entered a guilty plea

Your attorney should have told you that it is up to the court to set the sentencing date. Typically it would vary depending on the county, whether it is a misdemeanor or felony, vacation schedules, etc. Perhaps a month might be approximately correct.
