Legal Question in Traffic Law in New York

No turns at intersection Mon-Fri

I made at a turn at an intersection with a sign forbidding turns Mon-Fri on Labor Day (Monday) in Queens, NY and was pulled over and ticketed. Officer states that regardless of Holiday, sign is in effect Mon-Fri 7am-7pm, I made the turn around 6pm thinking it was ok to do so on a Holiday. Should I be pleading guilty because the sign doesn't state ''except holidays''? What is the NYC law on this? Also, the description on my ticket reads only ''Disobey Sign'' without stating which type of sign nor a time of offense. Would this be a valid defense?
