Is a will enough protection?

Fifteen years ago my Father-In-Law helped us build a house on a piece of his property. We have been paying him monthly with the understanding that he would deed the house over to us.He has the deeds to everything. That has not happened and now he just wants to leave the house to us in his will. He has not been in good health and we are afraid if he has to (God forbid) be put in a nursing home that we will loose our home. He also has a home of his own.Isn't deeded the house to us the safest way? Also, can the will be contested by a grandchild? My Father-In-Law has two living children and one deceased.

The deceased has a daughter. Could she come up and contest the will and receive a third of all property, and again with us loosing our home? My Father-In-Law thinks this cannot happen. Do we have any legal rights at all?
