Legal Question in Intellectual Property in Arizona

Are testimonials mentioning me, and written by guests I personally served, posted on a previous employer's website, copyright protected to the previous employer?

Not unless they copyrighted them somehow or they state that all information on their website is copyrighted, and it truly is copyrighted. Otherwise it is information available to the public. You could use it however desired. You could also ask those individuals for consent to use the information for your own purposes.
