How do I set up a trust in Barbados

I would like to find out how to set up a trust in Barbados, and also one in New York and California. Specifcally there are a number of properties in Barbados and New York and I would like to make sure that these properties are protected from estate taxes etc.

Check with estate planning attorneys in your residence state. It may just take one trust in that jurisdiction, or perhaps more than one, but that attorney will be your starting point and should be able to arrange for attorneys in the other jurisdictions to advise as well.

The U. S. by treaty has arraingments to recognize Trusts done by residents of the various U. S. States. However, it should be checked out, and if in doubt do two trusts. The jurisdiction in which you've established residency is the primary jurisdiction.
