Employment on Contract

Can we offer employment on contract for a fixed period, say 1 or 2 years, to a person with a consolidated pay for the contract period, without PF and other statutory allowances and benefits as per the Indian laws?

What are the issues involved in such appointment? Whether it will be governed by the Indian Contract Act? What is correct law applicabele in such cases?
