I would like to know what kind of documentation would be considered for a journal of events to be submitted to the court and be legitimate enough. Handwritten notepad paper, text messages, typed document, etc?

Any type of journal may be used so long as you lay proper foundation for the admissibility of the exhibit. Foundation means that you provide a sufficient basis for the court to deem the exhibit reliable evidence.
