Legal Question in Real Estate Law in Minnesota

I started a restoration of my parents car 15+ years ago. There was almost nothing left exept for the rear shell and drivtrain. I purchased a parts car and used most of the parts on this car. The car has been in my possession or the person restoring it the entire time. The car is drivable, but never completed. My parents have maintained registration and insurance on it, (since it is still in there name i cant) but have never signed it over to me. Now i have had a falling out with them and want the car signed over. I feel that they wont do it and i have thousands of dollars invested. I have the title and every other document related to the car, but the title is not signed. Is it mine by possession or ?????

WIthout being able to prove that there was an agreement to sel you the car, give you the car, the car remains the property of the title holder.
