Legal Question in Intellectual Property in California

On a patented baking mix recipe can I avoid infringement if I make minor changes to the recipe? For example in the patented recipe is said that it uses between 10 and 30% sugar and 2% fat ; I would use 35% sugar and 4% fatt.
