can I sue an employer for creating a hostile working environment and forcing me to come into contact with pork even though she has documentation about my allergy?

That doesn't sound like hostile work environment. You may make an argument possibly under disability discrimination for failing to provide reasonable accommodations or even some common law negligence or battery. But not hostile work environment unless it under the idea that she has created a hostile work environment for those allergic to pork. Caveat is if you work in a place that deals with a lot of pork then even this argument does not fly.
