eminent domain and rezoning

I'm in a dispute with my town over a redevelopement zone in which my home and 144 others are the target. I'm fighting this,however, the town mentioned that even if we won and it was dropped they could change the zoning to, for instance, only parking lots. In that case I would still need to get out. Can they do this? Am I grandfathered in until I sell and that would apply to the new owners? It appears this fight is a no win situation if they can keep attacking us with other plans if they keep losing.

I always believed that eminent domain applied to building bridges, or a police station or park...how can they take our land to sell it to another for a business? (bowling alley, a movie theater and restaurants and condos is their use for this land) How in America, can this be legal to do?

I'm a divorced mother of 6. I will lose everything.
