after a will is probated, how long should it take to close the it. can a lawyer hold up closing it out?

Normally, once filed, it must be posted for ten days. After that, a "prove-up" is scheduled. That could be set within a couple of weeks or much longer depending on the court schedule.

If the attorney is having trouble with the case (for example, locating witnesses), then it could take longer. If the client is cooperating with the attorney, including meeting the client's financial obligations to pay for the probate process, then most probates should be able to be done between one and two months. It could be shorter of longer depending on the circumstances.
