Legal Question in Employment Law in California

If you sign a employment agreement with your employer in order to get a job.....Stating, should I find it necessary to leave the employment of the company, that I will agree to be fair to the company by giving (2)weeks notice. What can they do if I do not give them a 2 weeks notice in the state CA? And, can they hold my last pay check?

No, the employer cannot withhold your paycheck if you leave without providing notice. As for what other remedies the employer may have, it depends on what the contract says and whether the relevant provision is lawful.
