It is legal for a university to use software to track my online activity when I am using my personal computer in my dorm room using their ethernet connection? Can I expect any level of privacy or anonymity?

Of course it is. You are logging in on their connection. They own it and when you log in you consent to that. If you don't want that to happen, spend your own funds on something like Clear, Sprint or ATT and get your own connection.
